Fried Aubergine with Garlic Butter

You normally fry aubergines, but in this recipe, you microwave them - it's very quick, easy and healthy.

Ingredients

Aubergine 1
Garlic 2 cloves
Butter 1 tbsp
Soy sauce 1 tbsp
Chilli flakes (optional) 1 tsp
Bonito flakes 2 tbsp
Sauce:
Butter 2 tsp
Soy sauce 1 tsp
Bonito flakes 1 tbsp

Method

Divide the aubergine into 4 vertical pieces. Randomly peel, then cut into bitesize pieces. Put in a dish and wrap with cling film.

Microwave for 4 minutes. Beware you don't burn yourself, it will be very hot.

Put 1 tsp butter in a hot pan and add the roughly chopped garlic. Allow to sizzle then add the soy sauce and chilli flakes.

Almost immediately add the aubergines from Step 2 and sprinkle with the bonito flakes. Stir fry and mix well with the sauce for 2 minutes on high heat.

Remove to a serving dish. Add the remaining tsp of butter and soy sauce to the same pan and warm through. Pour over the aubergines and sprinkle with more bonito flakes.

Tips & Note

The chilli flakes can be left out if cooking this for kids or if you don't like it spicy
