Celery and Tofu Miso Soup

It's great because you can use the celery leaves too!

Ingredients

Hot water 500ml
Dashi stock granules (hondashi) 1/2 tsp
Miso 40g
Celery 3
Tofu 1/2
Dried wakame seaweed 2 tbsp

Method

Cut the celery into thin strips to get more flavour out of it, then into 5cm lengths. Use the leaves too.

Boil the hot water then add the dashi and celery and cook for 2 minutes. Turn the heat down to medium and dissolve in the miso in a bit of water. Add the small dice of tofu and the rehydrated wakame seaweed.

Pour the miso soup into a soup bowl and sprinkle with some chilli powder to give it a good kick.
