Miso Soup with Cabbage and Fried Tofu (Aburaage)

Ingredients

Sweetheart cabbage leaves 5-6
Celery 1
Fried tofu (aburaage) 1
Dashi stock granules or fish stock 1/2 tsp
Hot water 500ml
Miso (red or mixed) 35-40g
Spring onion 1/3

Method

The fried tofu will be delicious if you boil it lightly or wash in hot water to remove the excess oil. Use plenty of your favorite cabbage.

Boil the water in a pan and add the dashi stock and roughly chopped celery. After 1 minute add the cabbage and boil for 2 minutes.

Turn the heat down and add the miso dissolved in a bit of water. Add the fried tofu cut into 8. As soon as the oil and soup combines, it's ready.

Serve in a bowl or soup dish and sprinkle with the finely chopped spring onion. You could also sprinkle some chilli power if you like.
