Cod Roe Rice Balls (Onigiri)

It's easy to get the taste of the good old days by using tinned cod roe.

Ingredients

Tinned cod roe (100g) 1/2
Cooked rice for 1
Soy sauce 1 tsp
Chilli powder 1 tsp
Mayonnaise 1 tbsp
Sesame oil 1 tsp
Soy sauce 1 tsp
Salt as required
Nori sheet 1

Method

You can buy tinned cod roe in any large supermarket. Transfer half the 200g tin into a container, separate it a little, wrap with cling film and microwave for 1 minute.

Add the cod roe and all the seasonings except the nori seaweed into the just cooked hot rice in a large bowl. Mix well with a spoon and check for seasoning. Adjust with salt if necessary.

This time I divided it into four equal parts and made four small triangular rice balls, but you can make as many as you like, in balls or triangles.

The mayonnaise and sesame oil may leave a little oil on your fingers, so it's okay to wrap them all with the nori seaweed.
