Spinach and Poached Egg Miso Soup

Ingredients

Hot water 250ml
Miso (red or mixed) 20g
Dashi stock granules 2-2.5g
Baby spinach 100g
Egg 1
Spring onion 1/4

Method

Put the hot water in a pan on medium heat and add the miso through a strainer. Mix well.

Add the spinach and cook for 1 minute, the miso soup is now ready. Transfer to a serving bowl. Now make the poached egg.

Put some cling film in a cup or mug and break the egg into it. Pierce the yolk a couple of times then wrap up the cling film and twist.

Pour lots of hot water into the cup and put in a microwave for about 70 seconds.

Unravel the cling film and remove the poached egg with a spoon. Place it gently on top of the miso soup from Step 2.

Complete by scattering the chopped spring onions on top. Bon appetit!

Tips & Note

The poached egg cooking time will vary somewhat depending on the amount of water in the cup and the microwave wattage, so cook once for 70 seconds and then another 10 seconds until it reaches your desired consistency.
