Succulent Steak with Japanese Sweet Sauce

Ingredients

Your favourite steak 200-250g
Salt & pepper as required
Vegetable oil 2 tbsp
Garlic 3 cloves
Soy sauce 3 tbsp
Sake 2 tbsp
Mirin 3 tbsp
Sugar 1 heaped tbsp
Butter 1 tsp
Wasabi paste as you like

Method

Remove the excess fat and fibres from the steak. Season with a touch of salt and lots of pepper and keep aside for 5 minutes.

Put the oil in a frying pan and add the 2mm sliced garlic. Fry on both sides for 2 minutes to brown then remove to a plate.

Add the butter to the pan and the steaks. Fry for 3 minutes on medium heat on each side then remove to a plate and cover with foil to rest.

After 5 minutes, add all the seasonings except the wasabi to the frying pan and bring to the boil. Return the steaks to the pan and baste.

Turn the heat off after 5-6 minutes and allow to cook on residual heat for 5 minutes. Transfer to a serving dish and pour over the sauce. Garnish with garlic chips from Step 2 and serve with the wasabi on the side.

Tips & Note

You can use horseradish instead of wasabi.
