Ingredients

Minced pork 50-60g
Beansprouts 80g
Spring onion 1
Hot water 400ml
Fish stock cube 1
Miso (red or mixed) 45-50g
Chinese chilli bean sauce (Tobanjan) 1 tsp
Sugar 1 tsp
Salt & pepper as required
Sesame oil 1 tbsp
Butter 1 tsp
Egg noodles (fine) for 1

Method

Put the stock cube in a bowl and add the hot water to dissolve it.

Put the sesame oil in a large frying pan and fry the minced pork. When oil is released, add the miso and chilli bean sauce and fry.

After 1 minute, add the stock from Step 1 and the sugar. Bring to the boil.

Add the beansprouts and simmer on high heat for 2 minutes.

In the meantime, boil the noodles. Drain and transfer to a bowl. Pour in the soup and minced pork and sprinkle with the finely chopped spring onions.

Optionally, you can add the butter for a deeper flavour if you like.
