Minced Fish Cakes (Kamaboko)

Ingredients

Cod 270g
Salt 8g
Mirin 14ml
Sugar 24g
Egg white 1
Small prawns 8-10

Method

Remove the skin from the cod and chop into pieces (cod loin will already have the skin removed).

Soak the cod in iced water for 3 minutes then pat dry well.

Add 4g salt to Step 2 in a food processor and mix to a smooth paste.

When the paste becomes firm, add the remaining 4g salt and blend further until sticky. Add the egg white, mirin and sugar and blend further.

Scoop the mixture into a steamer and garnish with the prawns. Steam for 8 minutes.

Tips & Note

●Use fresh cod and blend well until smooth to give a lovely texture
●The mixture will expand so scoop into high mounds at Step 5
