Potato Cakes with Sweet Soy Syrup

This is a very popular dish in Hokkaido, at an izakaya or at home. It's sweet and delicious, try it!

Ingredients

Potato (Maris Piper) 1 (200g)
Potato starch 1 tbsp
Butter (for the mixture) 1 tsp
Butter (for frying) 1 tsp
Syrup:
Soy sauce 2 tbsp
Mirin 2 tbsp
Sugar 4 tbsp
Water 4 tbsp
Potato starch + water 1 tbsp + 3 tbsp

Method

Peel the potato and slice to 5mm thick. Boil for 10 minutes until soft.

Drain well and return to the pan and allow excess water to evaporate.

Add the butter and potato starch whilst the potato is still hot and mash until smooth.

Make the syrup: put the soy sauce,mirin, sugar and water in a small pan and heat until the sugar dissolves. Allow to cool before adding the potato starch mixed in water.

Make the mash potato from Step 3 into flat patties 1cm thick. Put the butter in a frying pan and add the potato cakes and fry for 3 minutes on both sides.

Reheat the syrup on medium heat and allow to thicken then pour over the potato cakes before serving.
