Chestnut & Fig Stuffing

Ingredients

Chestnuts (vacuum packed or tinned) 5
Stuffing mix:
Sausagemeat 80g
Minced pork 80g
Dried figs 25g
Breadcrumbs 10g
Onion 30g
Fresh lemon thyme sprig 1
Parsley 5g
Egg 1
Salt 1/4 tsp
Pepper 1/4 tsp

Method

Preheat the oven 200C.

Remove the lemon thyme from the sprig and finely chop with the parsley.

Put all the stuffing mix ingredients in a bowl and mix well.

Divide into 5. Place a chestnut in the centre of each and roll to cover. Put on an oven tray covered in foil.

Roast in the oven for 20-25 minutes.
