Bill Granger's Pancakes with Tofu

Instead of using ricotta cheese, I made this with tofu, and it goes really well with bacon.

Ingredients

Eggs 3
Milk 100ml
Tofu 200g
Plain flour 130g
Baking powder 1 tbsp
Salt a pinch
Butter 4-5g
Bacon 4 slices

Method

Separate the 3 eggs and put the whites in a separate bowl for whisking later.

Add the kitchen-towel dried tofu and milk in with the egg yolks. Add the sifted flour, baking powder and salt.

Stir gently to mix lightly - it doesn't matter if you see lumps of flour because a smooth texture will result in a heavy batter.

Put some butter into a frying pan and drop a tablespoon of batter directly onto the butter to get a raised pancake.

On a medium heat, cook the pancakes without a lid for 3 minutes one side and 2 minutes the other side. It goes perfectly with butter on top and then crispy bacon.

Tips & Note

It's when you gently stir the flour and egg yolk that makes this pancake nice and fluffy. You probably think you'll end up with a lumpy pancake, but this is absolutely right, don't worry!
