Chinese Leaf Salad

Make lots but you'll eat all of it...your bowl will be empty straightaway. It's perfect as a side dish but also goes well with fish or other main dishes.

Ingredients

Chinese leaves 1/2 (700g)
Salt 1 tsp
Sugar 1/2 tbsp
Dashi stock granules 1 tsp
Mayonnaise 2 tbsp
Crushed sesame seeds 1 tbsp
Bonito flakes pack 1

Method

Here are the ingredients.

Roughly chop the Chinese leaves into large chunks. Boil the lower parts in salted water for 3 minutes on medium heat.

Add the top parts and boil for 2 minutes.

Drain in a colander and allow to cool, then squeeze out any remaining water.

Mix the salt, sugar and dashi stock granules together in a container.

Add Step 4 into Step 5 and mix by hand.

As it cools, it will release more moisture, so squeeze again. Add the mayonnaise, crushed sesame seeds and bonito flakes. Mix lightly, it's now ready to serve.

You can make a delicious miso soup by adding more vegetables and miso to the water from the boiled Chinese leaves.

Tips & Note

Start boiling the lower parts of the Chinese leaves first as they are harder.
