Steamed Chestnut Muffins

A rather nostalgic old fashioned recipe.

Ingredients

Flour 200g
Baking powder 10g
Light brown sugar 100g
Egg 1
Milk 150g
(milk & egg = 210g)
Vegetable oil 20g
Chunky chestnut paste (see below) 120g

Method

Prepare a steamer and muffin cases.

Sieve the flour and baking powder into a bowl.

Add the light brown sugar, egg, milk, vegetable oil and chunky chestnut paste*, whisking with each ingredient.

When the mixture is smooth, rest at room temperature for 30 minutes.

Pour Step 4 into the muffin cases and steam on high heat for 13-15 minutes.

They're warm and comforting!

Tips & Note

*Chunky chestnut paste: put 100g chestnuts into cold water and boil. Drain then add 150g sugar and 50g water and simmer until it becomes a chunky paste.
