Caramelised Walnuts

Anyone can make this it's so simple but it takes a bit of time.

Ingredients

Walnuts 200g
Dark muscovado sugar 200g
Water 2 tbsp
Sesame seeds as you like

Method

This is the dark muscovado sugar I used, it's available in many supermarkets.

Put the sugar in a pan and add the water then turn the heat on medium until it comes to the boil and bubbles. Mix to dissolve the sugar.

Turn the heat off and add the walnuts.

Here is where you need patience. Keep mixing with a wooden spoon, lifting from he bottom to the top folding over and over.

This is about half way (7 minutes).

It's great exercise! You probably want to stop but be patient and mix for another 5 minutes.

The consistency will change as you get nearer the end. I got bored so added the sesame seeds here and continued to mix.

Your arm is probably aching by now, it's like you're in boot camp. What you're dong is waiting for the sugar to re-crystalise after dissolving, so it's forming into small pieces again.

After 15 minutes when it's not sticky any more, it's ready. You can use any nuts you like.

It's so simple but tiring, so do this instead of your usual exercise.
