Minced Beef Stir Fry with Miso Aubergine

Fry the beef and miso together at the start, then it will have a lovely rich deep flavour.

Ingredients

Aubergine (medium) 1
Vegetable oil as required
Miso (red) 1.5 tbsp
Mirin 2 tbsp
Soy sauce 1 tbsp
Chinese chilli bean sauce 1.5 tbsp
Sugar 2 tsp
Chicken stock 150ml
Sesame oil 1 tbsp
Minced beef or pork 120-150g
Green beans 10
Potato starch in water as required

Method

Cut the aubergine into bitesize pieces and score in several places. Shallow fry on high heat skin side down.

When the aubergine is soft, transfer to some kitchen paper to remove excess oil.

Add some oil to a large frying pan and str fry the minced beef on high heat until browned and separate. Add the seasonings and fry together.

Add the green beans cut into 3 and fry together.

Add the chicken stock and bring to the boil, then reduce the sauce to half. Add the potato starch in a bit of water to thicken the sauce. Return the aubergines from Step 2.

Mix well then transfer to a serving dish.

Tips & Note

Minced pork is also good, it probably works better than minced beef. You can drizzle some chilli oil before serving if you like it spicy.
