Ingredients

Aubergine (medium) 1
Pork fillet or loin 140-200g
Romano pepper 1
Ginger 1 thumb
Soy sauce 2 tbsp
Mirin 2 tbsp
Vegetable oil 5-6 tbsp

Method

Score the aubergine skin 5mm deep in a criss cross pattern (this will reduce its cooking time) and cut into bitesize pieces.

Put 4-5 tbsp oil in a pan and fry the aubergines at 180C, skin side down.

Fry for 4 minutes then add the roughly chopped romano pepper and fry for 1 minute. Remove and drain on kitchen paper.

Put the remaining 1-2 tbsp oil in the frying pan and fry the thinly sliced pork until cooked. Return Step 3 to the pan and fry for 1 minute.

Add the soy sauce and mirin and fry well. Add the grated or finely chopped ginger and stir in. It's ready.

Tips & Note

Aubergines absorb a lot of oil when they fry. You could grill or steam cook the aubergine instead for a lower calorie dish.
