Ultra Easy Crunchy Top Creme Brulee

Looks lovely and is satisfying to hear the crack when you break into the sugar top!

Ingredients

Egg yolks 5
Double cream 300ml
Milk 300ml
Sugar 5 tbsp
Vanilla extract as required

Method

Mix the egg yolk, double cream and milk together in a large bowl. Add the sugar a bit at a time to your preferred sweetness.

Add the vanilla extract.

Put ramekins in a tray and fill with the mixture from Step 2. Fill around the ramekins 2cm high with water.

Put the tray in a preheated oven 190C (Gas mark 5) for 30 minutes. Pierce with a skewer to check for a firm set consistency.

Allow to cool and sprinkle liberally with sugar. Grill until the surface becomes solid and set. You can use a kitchen blow torch if you have one.

Tips & Note

☆At Step 1, remember you will be adding a thick sugar crust on top, so it's best to make it not that sweet
