Leek 1
Water 800ml
Eggs 2
Weipa (Chinese condiment) 1 tbsp
Sake 1 tbsp
Salt 1/4 tbsp
Potato starch 1 tbsp
Water 2 tbsp

Method

Here are the ingredients.

Wash the leek and chop into 5mm diagonal slices. Put the water, weipa, sake and salt in a pan and bring to the boil. Add the leeks and cook for 2 minutes.

Mix the potato starch with the water and pour into the pan at Step 2 to thicken the sauce.

Beat the egg in a small bowl and pour into the pan while stirring lightly. It's ready to serve immediately.

Tips & Note

Once the leeks are heated, it will shrink in volume. To make it colourful, you could add carrots. If you use stock instead of weipa, the end result will be more western and less Chinese.
