Instant Gazpacho

Chop the vegetables, add water and olive oil and blend - so simple but so delicious!

Ingredients

Ripe tomatoes (medium) 6
Piquillo pepper 1
Green pepper 1
Onion 1/2
Cucumber 1/4
Garlic 1 clove
Baguette or bread slice 1
Water 200ml
Salt & pepper a pinch each
Vinegar 3 tbsp
Extra virgin olive oil 1 tbsp
Cumin powder 1 tbsp
Croutons (optional) as you like
Basil leaves as you like

Method

Deseed the tomatoes and peppers. Remove the centre core from the garlic.

Put the chopped vegetables, seasonings and bread slice in a bowl and mix with a blender.

It should be a nice thick smooth mixture, it will take about 2-3 minutes.

Transfer to a serving bowl.

Garnish with any remaining finely chopped cucumber, peppers and the croutons and basil leaves. Sprinkle with ground pepper and drizzle with the olive oil before serving immediately.

Tips & Note

●The gazpacho will totally depend on the quality of the tomatoes, so choose the ripest sweetest ones you can find
●You'll get lots of fibres in this soup but you can sieve it if you prefer
●Add ice cubes on a really hot summer day!
