Light and Refreshing Yogurt Mousse

Use marshmallows to make this very simple recipe.

Ingredients

Marshmallow (white) 64g
Double cream 40g
Passion fruit & mango smoothie 50g
Lime juice 2 tsp
Greek yogurt 160g
Fresh mango 1/2
Passion fruit 1

Method

Put the chopped mango into two dessert glasses. Keep some aside for the garnish.

In an ovenproof bowl, put the double cream, marshmallows and passion fruit & mango smoothie.

Microwave for 40 seconds (1000W) and whisk to melt the marshmallows. Allow to cool.

When it's hand hot, add the Greek yogurt and lime juice and mix well.

Pour into the dessert glass over the mango Keep in the fridge to set for 2 hours.

Garnish with mango pieces, passion fruit and mint leaves before serving.

Incidentally, the wrinklier the passion fruit skin, the sweeter the fruit.

Tips & Note

●I used the ready bought Innocent Passion Fruit & Mango Smoothie - if you have time, sieve it beforehand. You could use any raspberry smoothies that work well in this recipe
●Most marshmallow packs have a mixture of white and pink but you can find white only at Waitrose.
