Candied Walnuts (Kanro-ni)

Ingredients

Roasted walnuts 35g
【A】
Soy sauce 1 tbsp
Brown sugar 1 tbsp
Mirin 1/2 tbsp
Water 1 tbsp
Starch syrup (or Golden Syrup) 1/2 tbsp
Nori sheets 1
Bonito flakes 2 pinches
Sesame seeds 1 tsp

Method

Put all the ingredients for A into a saucepan and add ripped up nori.

When the nori has thickened, add the roasted walnuts (remove the thin paper skin if possible).

Simmer gently, mixing all the time, until the liquid has gone.

Sprinkle with bonito flakes and sesame seeds.

Tips & Note

I roasted the walnuts beforehand at 180C for 10-12 minutes.
For the starch syrup, I used Clearspring: Rice Malt Syrup this time which gave it a smooth and mild sweetness.
