Turkish Spicy Okra & Egg Breakfast

Perfect for a weekend brunch.

Ingredients

Unsalted butter 40g
Garlic 1 clove
Cumin powder 1/2 tsp
Curry powder (medium mild) 1/2 tsp
Chilli powder as required
Okra 5
Eggs 2
Greek yogurt 240g
Sourdough bread as required

Method

Put the butter in a pan and melt on low heat. Add the roughly chopped okra.

Add the grated garlic, cumin powder and curry powder and mix. Season with a pinch of salt.

Make a poached egg: boil some water in a pan and add vinegar (1.5 tbsp for 1 litre water)...

Turn down to a simmer and stir the water. Drop in the cracked egg gently.

Remove after 2 minutes if it's a large egg and drain.

Put the Greek yogurt at room temperature or microwave for 20 seconds.

Put the yogurt into a dish and place the poached egg on top. Cover with the sauce from Step 2.

Serve with sourdough bread and enjoy!

Tips & Note

●Choose Greek yogurt with less liquid, I use TOTAL
●Don't add any salt to the yogurt or the egg, so give the okra sauce a good flavour.
