Oyster Donburi (Rice Bowl)

I used John West tinned smoked oysters for a Japanese traditional rice bowl dish.

Ingredients

Smoked oysters 1 tin (85g)
Onion (medium) 1/2
Carrot (small) 1/2
Mushrooms 2-3
Spring onions 2
Eggs 2
Sugar 1 tbsp
Soy sauce 2 tbsp
Mirin 3.5 tbsp
Dashi broth 70ml

Method

This is the John West smoked oysters, £1.99 at Tesco. The number of oysters will depend on their size.

Thinly slice the vegetables so that they cook quickly. Beat the eggs.

Put all the seasonings into a small pan and mix together. Add the carrot and onion.

Turn on the heat and bring to a boil. 1 minute later, add the mushrooms, then the drained oysters another minute later. Add the spring onions.

1 minute later, pour in half the beaten eggs in a round and put the lid on.

Another minute later, pour in the remaining eggs and replace the lid. Turn the heat off and allow to sit for 1 minute. Put onto cooked rice and enjoy.

Tips & Note

●The oysters are in oil, but we don't use the oil.
●If the oysters are overcooked, they will shrink, so add them at a later stage.
