Baked Quiche on Toast

This works well with really thick slices of bread (if you can find it) or two medium ones pressed together. An unusual but tasty breakfast option.

Ingredients

Frozen spinach 4 cubes
Bacon rashers 2
Mushrooms 4
Double cream 70ml
Butter 1 tsp
Salt & pepper as required
Cheddar cheese (grated) 40g
Chicken stock cube 1/4
Eggs 2
Sliced bread (white, medium) 4

Method

Put the butter in a large frying pan and fry the chopped bacon, sliced mushrooms and spinach. Season with salt & pepper and allow to cool.

Put the double cream, egg, cheese and stock cube in a bowl. Add the cooled mixture from Step 1.

Put two medium slices of bread together and press down with a large spoon in the centre to create a hollow (be careful you don't make a hole).

Pour the mixture from Step 2 into the hollow and bake in a preheated oven 180C.

In 8-10 minutes, the sauce will firm up. Remove and transfer to a serving dish. Eat while it's nice and hot.
