Ingredients

Butter 2-3 tbsp
Flour 2-3 tbsp
Milk 500-600ml
Salt & pepper as required
Nutmeg (optional) as required
Double cream (optional) 1-2 tbsp

Method

1
Melt the butter in a pan on low heat.
2
Add the flour and mix well. When it becomes a bit runny, keep mixing and on low heat.
3
Add the milk a bit at a time, stirring all the time. When all the milk has been added, keep stirring and turn up to medium heat until thickened.
4
Season with salt & pepper and nutmeg, adjust to taste. You can add the double cream here, if you like.

Tips & Note

If you prefer a lighter sauce, reduce the milk to 250-300ml and add chicken stock 250-300ml.
