[Video] Scotch Egg

Let's cook an Easter recipe. I'm not Christian, but making seasonal recipes makes me really look forward to spring.
Try to get the middle of the yolk to be half-boiled.

Ingredients

Eggs 4
Salt a pinch
Minced pork (minced beef is also good) 500g
Salt 1/2 tsp
Pepper a pinch
Dried sage 1 tsp
Breadcrumbs 4 tbsp
Milk 2 tbsp
Egg 1
Plain flour 1 tbsp
Egg 1
Breadcrumbs 100g
Vegetable oil for deep frying as needed
A.Mayonnaise 100g
A.Cornichons (chopped) 30g
A.Flat parsley (chopped) 3 tbsp
A.Horseradish 2 tsp
A.Japanese soy sauce 1 tsp
Salt & pepper a pinch

Method

Put 4 eggs and salt into a milk pan and pour over boiling water.

On a low heat for the first 1 or 2 minutes, roll the eggs over in the water with a fork - this gets the yolk into the centre.

After 8 minutes boiling, put the eggs into cold water and peel the shell in the water (when the egg is cold, it firms it up, making the next steps easier).

Put the minced meat, salt & pepper, sage, breadcrumbs, milk and one new egg into a bowl and mix thoroughly.

Divide this mixture into 4. Put 1 part onto your palm and flatten, place one boiled egg in the centre. Wrap the mince around the egg, taking care to avoid air being trapped.

Making the sauce: put all the A ingredients together in a bowl and season to taste with salt & pepper.

Put flour over the eggs then rub to cover finely. Then dip into beaten egg before rolling in breadcrumbs. Repeat with all the eggs.

Heat the oil to medium and deep fry the scotch eggs for 7-8 minutes until nicely browned. Keep stirring. Drain well on kitchen paper and cut in half. Serve alongside the sauce.

Tips & Note

Tip: when boiled eggs reach room temperature, they are easier to remove the shell. Find your best method for boiling eggs depending on your cooker. Mine took 8 minutes to get the perfect boiled egg for this recipe. Egg recipes are essential at Easter time. British people would suggest to use sausage meat instead of minced meat but I think it's quite easily available and affordable to use minced meat to make the proper Scotch egg shape.
