Serves 3 Prep: 15 min Cook: 60 min

Ingredients

Sirloin steak 350-400g
Salt & pepper a little
Tofu (firm) 1
Onion (medium) 1
Leek 1
Chestnut mushrooms 6
Broccoli 50-60g
Eggs 2
【Sauce】
Noodle broth concentrate (mentsuyu) 100ml
Sake 50ml
Soy sauce 100ml
Granulated sugar 5-6 tbsp
Water 100ml

Method

1
This is the noodle broth I used.
2
Make the sauce first. If you like a sweeter one, add a bit more sugar.
3
Here is what I used this time but you can use your favourite vegetables.
4
Preheat the oven 220C. Slice the beef to your preferred thickness and season with salt & pepper.
5
Slice all the vegetables thinly to cook quickly and put into an oven tray with the beef. Pour in the sauce and leave for 5 minutes.
6
Put tin the oven. After 15 minutes, baste with the sauce juices over the top vegetables. Bake again for 20 minutes.
7
Baste again and pour over the two beaten eggs.
8
Bake again for 5 minutes, now it's ready.

Tips & Note

●You might think the sauce is too thick, but it's fine as the vegetables release some moisture.
●If you can't find noodle broth, add extra soy sauce and water (50ml each) into the sauce.
