Cod Crumble

It's a cod version of apple crumble!

Ingredients

Cod fillets 2 (300g)
Salt & pepper as required
【Crumble】
Wholegrain mustard 1 tsp
Parsley (finely chopped) 2 tbsp
Water biscuits 40g
Mayonnaise 2 tbsp
【White Sauce】
Unsalted butter 20g
Flour 1 tbsp
Milk 250ml
Chicken stock cube 1/2

Method

Season the cod with salt & pepper.

Roughly smash the water biscuits, then put all the crumble ingredients into a bowl and mix together.

Place the cod in an oven tray and top with the crumble mix.

Preheat the oven 180C and bake for 20 minutes until the topping is nicely browned.

In the meantime, make the white sauce. Put the butter in a pan on low medium heat. Add the flour and fry a little.

When it starts to bubble, crumble in the chicken stock cube and the milk a bit at a time..

Stir well every time you add the milk until it's a nice thick sauce.

Adjust the sauce to taste, then pour over the cooked cod. It's ready to serve.

Tips & Note

●Water biscuits are simply water and flour. Carr's has a Royal Warrant but lots of brands are available at the supermarkets.
● The white sauce can burn easily, so keep stirring from start to finish.
