Colourful Peppers, Pizza-Style

Kids will love this colourful dish.

Ingredients

Peppers (red, yellow, orange) 4
Olive oil 1 tbsp
Garlic 1 clove
Tomatoes 2
Onion 1/2
Ham or salami 50g
1 stock cube in water 500ml
Your favourite cheese as required
Finely chopped parsley as required

Method

Chop the peppers into half vertically and deseed. Deseed the tomatoes and roughly chop. Finely slice the onion. Cut the ham or salami into 1cm dice.

Put the oil and garlic into a frying pan on low heat.

When you can smell the garlic, add the peppers and cook for 5 minutes. When browned, add the stock.

Lay the peppers open and fill with the onion, tomatoes, ham or salami, and season with salt & pepper. Put the lid half on and simmer for 30 minutes.

Sprinkle grated cheese on top. Put the lid half on for 5 minutes until the cheese melts. Transfer to a serving dish and sprinkle with the parsley.

I used pepperoni this time (salami).
