BLT Rice Sandwich (Onigirazu)

Ingredients

Bacon rashers 2
Lettuce leaves 2
Sundried Tomatoes 3
Sesame salt 1 tsp
Nori sheet 1
Cooked rice 100g

Method

I used sundried tomatoes in olive oil.

Fry the bacon until really crispy.

Put some cling film onto a chopping board and place the nori sheet flat on it, in a diamond shape. Put 50g of the cooked rice in the middle and sprinkle sesame salt on top.

Put one lettuce leaf and fried bacon rasher on top, together with 1 tsp of mayonnaise and the sundried tomatoes.

Put another lettuce leaf on top, and the remaining cooked rice.

Lift the nori seaweed together with the cling film from top and bottom and overlap at the centre. Press down firmly. Repeat with the left and right sides to create a parcel.

Leave for around 4-5 minutes until it firms up. Slice in half with a wet knife, remove the cling film and put on a serving dish.

Tips & Note

Because you're making this with rice and nori seaweed, you can choose whatever filling you like that goes with rice. Or try something new, you might be surprised!
