Oven Baked Sea Bream with Radish Sauce

Grated radish makes a pretty red and white sauce

Ingredients

Whole sea bream 2
Olive oil 2 tbsp
Garlic 2 cloves
Onion 1
Radishes 6
White wine 50ml
Salt 1/2 tbsp
Lemon juice 1 tbsp
Parsley 2 tbsp
Coriander 2 tbsp

Method

Preheat the oven 200C.

Remove the insides of the fish and wash well. Pat dry with kitchen paper.

Put the sea bream in an oven dish with the heads on the left and score each 3 times. Sprinkle with some salt & pepper and brush with some olive oil.

Put in the oven for 25-30 minutes.

In the meantime, make the sauce. Finely slice the garlic and onions and grate the radishes.

Put the olive oil in a pan and add the garlic and fry on low heat.

Turn the heat up to high, add the onions and cook until soft.

Add the grated radishes, wine, salt and lemon juice.

When the alcohol has evaporated, add the finely chopped parsley and coriander and turn the heat off.

Transfer the sea bream onto a serving dish and pour over the sauce before serving.
