Spring Onion & Kimchi Pancake (Chijimi)

Ingredients

Spring onions 1 bunch
Kimchi 80-100g
Flour 100-150g
Water 200ml
Potato starch 2 tsp
Egg 1
Salt & pepper as required
Sesame oil as required
Vegetable oil as required
[Sauce]
Gochujang 1 tbsp
Soy sauce 1 tbsp
Vinegar 2-3 tsp

Method

Cut the spring onions lengthways then into 3. Cut the kimchi into bitesize pieces.

Mix the water, egg and potato starch in a bowl, then add to a bowl with the flour a bit at a time,mixing all the time. Season with salt & pepper.

Add the spring onions and kimchi and mix well.

Put the oils into a frying pan and heat.

Scoop a spoonful of the mix at Step 3 into the frying pan and spread out the spring onions and kimchi evenly.

Fry on medium high heat for 3 minutes until brown. Turn over and fry for a further 2-3 minutes.

Remove onto a serving dish and cut into wedges.

Mix all the sauce ingredients together and serve on the side.
