Deep Fried Salmon and Vegetables on Rice

Simply delicious! Use your favourite vegetables.

Ingredients

Salmon fillets 2-3
Soy sauce, sake 2 tbsp each
Mirin 1.5 tbsp
Grated ginger 1 tbsp
Potato starch, dashi broth, vegetable oil as required
Green beans 1/2 pack
Onion 1
Spring onion (chopped) 4 tbsp
Cooked rice for 4 people
Tomatoes (if you like) 2

Method

Mix the soy sauce, sake, mirin and ginger juice. Add the bitesize salmon and marinate.

Drain the marinade (keep aside) and dredge the salmon with potato starch.

Deep fry the trimmed green beans and sliced onion.

Turn the heat down to 160C and deep fry the salmon.

Mix the drained marinade and dashi broth into a pan and reduce until it becomes a syrupy consistency.

Put the cooked rice into a small bowl and pour a little sauce from Step 5 over it.

Top the rice with Steps 3 & 4. Finely chop the spring onion and tomato, garnish with this and some more sauce.

Tips & Note

Make sure to pat dry the vegetables before deep frying at Step 3.
