Cold Broad Bean Soup

It's wonderful for a hot summer!

Ingredients

Broad beans 2 cups
Dashi broth 300ml
Soya Milk 160ml
Firm tofu 120g
【A】
White miso paste 1 tbsp
Tahini 1/2 tbsp
【B】
Crushed sesame seeds 1 tbsp
Ginger juice 1/2 tsp
Salt as required
Shiso (herb) & nori sheet as required

Method

Boil the broad beans and remove the skin.

Pat dry the tofu.

Add 2/3 of the broad beans into the dashi broth and crush with a hand blender.

Add some of Step 3 to ingredients【A】then put this back into the remainder of Step 3. Cook on a low heat.

Add the tofu broken into pieces, soya milk and 1/3 of the broad beans into Step 4, as well as ingredients【B】.

Let it cool to room temperature. It goes well with cold noodles or udon.

Tips & Note

●The soup should be a good strong flavour for when you dip the noodles in.
●The soup also goes well with cooked rice.
