Turkey Meatloaf Christmas Wreath

Two colourful mash potatoes make this turkey dish a real Christmas special!

Ingredients

Minced turkey 500g
Salt & pepper as required
Onion 1
Olive oil as required
Bread 100g
Milk 100ml
Egg 1
Dried cranberries 25g
Mashed potatoes (2 kinds, see below) as required
Salad (for garnishing) as required

Method

Finely chop the onion and fry in olive oil until soft. Cut off the bread crusts and discard. Tear the bread into pieces and soak in the milk.

Finely chop the dried cranberries (if they are sugared, soak in hot water to remove the sugar).

Put the minced turkey, salt & pepper, onion, bread, dried cranberries and egg in a bowl and mix together well.

Spread some oil on the inside of a ring tin (20cm diameter), then pour in the mixture. Bake for 40-45 minutes 180C.

Make two colours of mashed potato using potato flakes.

First the pink: add cranberry juice (235ml) and butter (15g) into 45g potato flakes and mix well.

For the green: add warmed milk (250ml) and butter (15g) to 45g potato flakes.

Add finely chopped parsley, salt & pepper and mix well.

■Making real mash potato:

Chop 3 peeled potatoes into bitesize pieces and boil in salted water. When soft, mash and divide into two.

【Pink mash】While the potato is still hot, add warm cranberry juice and butter until it reaches a suitable consistency for a piping bag.

【Green mash】Add warmed milk until it reaches a suitable consistency for a piping bag. Add finely chopped parsley and salt & pepper.

Use a star nozzle to pipe the mash in alternate colours on top of the cooked turkey meatloaf. Arrange the salad leaves around the meatloaf as decoration.

Tips & Note

If you don't have a ring tin, you could put the minced turkey mix on a baking sheet on an oven tray in a large doughnut shape and bake.
You can use potato flakes as well as fresh mash, so I've given both methods.
The star nozzle I used is rather large, just in case the mash is not creamy or has a few lumps.
