Mussels with Miso Soup

Ingredients

Mussels 1/2 pack (450-500g)
Water 3 bowls
Miso (red) as required
Sansho pepper powder as required

Method

How to prepare the mussels: wash the surface well and remove any fibres.

Any opened mussels or those that don't close when tapped or broken shell mussels should be discarded.

Put the water and mussels in a pan on high heat.

When the mussels open, add the miso and mix to dissolve.

Transfer to a serving bowl and sprinkle with sansho pepper powder and serve.

Tips & Note

●There is so much flavour from the mussels, so no stock is required
●You can garnish with watercress or rocket if you like
