Mince Pie

Christmas is not Christmas without a mince pie!

Ingredients

[Pastry]
Flour 175g
Salt a pinch
Unsalted butter 75g
Caster sugar or icing sugar 50g
Egg 1
Mincemeat 140g
Milk as required
Icing sugar as required

Method

Put the flour and salt into a large bowl and mix. Add the diced butter and sugar.

Mix to make like breadcrumbs.

Crack the egg in a bowl and beat. Add into Step 2 to make a dough. When it's firm, wrap in cling film and keep in the fridge for 20 minutes.

Remove from the fridge and roll out 2-3mm thick.

Cut out into fluted rounds, 7.5cm and 6cm diameter, 12 rounds of each size.

Brush melted oil or butter lightly in a muffin tin and place the large pastry rounds in each space. Fill with the mincemeat.

Cover each with the smaller pastry rounds and nip to seal the edges all round. Brush with milk on the top.

Bake in a preheated oven 190C for 20-30 minutes.

Remove and allow to cool. Remove from the tin and when completely cold, dust with icing sugar.

Tips & Note

●If you use salted butter at Step 1, no additional salt is required.
●If you use a food processor to make breadcrumbs at Step 2, use the pulse function.
