Serves 3 Prep: 10 min Cook: 10 min

Ingredients

Corn on the cob 3
Soy sauce 1 tbsp
Mirin 1 tbsp
Water 1 tbsp
Butter 1 tsp

Method

1
Cut the beard fibres off the corn cobs with scissors and peel back the skins. Keep a couple of leaves. Wrap in cling film and microwave (600W) for 5 minutes.
2
Allow to cool for 5-10 minutes. Remove the cling film and the remaining leaves and any fibres. it's ready to eat now if you can't wait!
3
Put the corn into a hot frying pan (no oil) and keep turning to brown nicely. Mix the soy sauce, mirin and water together in a small bowl.
4
When the corn starts to brown, add the seasonings from Step 3 and reduce to half. Add the butter and fry further. It's now ready.

Tips & Note

Microwaving the corn first gives less moisture than boiling it. Keeping a couple of leaves at Step 1 will keep the flavours in. Add the butter just before the end. You can season with salt & pepper or chilli powder if you like.
