Fried Vermicelli with Vegetables and Quail Eggs

Ingredients

Vermicelli 40g
Peppers (any colour) 2
Celery 1
Carrot 1/2
Cabbage 1/4
Spring onions 3
Quail eggs 6
Sesame oil as required
Potato starch in water as required
Seasonings:
Chicken stock cube 1
Water 100ml
Sake 2 tbsp
Soy sauce 1 tbsp
Salt & pepper a little

Method

Lightly fry the vermicelli in hot oil 170C.

Cut the peppers, celery and cabbage into bitesize pieces. Cut the carrots into fine strips and cut the spring onions diagonally.

Lightly fry the vegetables in sesame oil in a separate frying pan. Boil the quail eggs.

Mix the seasonings in a bowl and pour into the vegetables at Step 3. When the vegetables are cooked, add the quail eggs and potato starch in water to thicken the sauce.

Pour Step 4 over the fried vermicelli and serve.

Tips & Note

●The vermicelli will swell when frying so fry in small batches
●Use your favourite vegetables or any leftovers in the fridge
