Slow Cooked Pork Belly

Simply roast for a long time to really get the full deep flavour of pork belly.

Ingredients

Rolled pork belly joint 900-1000g
Spring onions 8
Sake 100ml
Soy sauce 80ml
Water 100ml

Method

Remove the string from the rolled pork belly joint.

When you open it out, it will be a flat square. Cut into 4cm widths.

Cut each into 3cm pieces across.

Cut the spring onions to match the size of the pan and put in the base.

Add the pork and pack tightly on top of the spring onions. Pour in the sake, soy sauce and water.

Bring to the boil and put the lid on then turn down to low and simmer for 90 minutes. Stir occasionally.

When the pork skin has softened, it's ready to enjoy with some mustard alongside.

Tips & Note

As you simmer the pork, remove any scum. You can add 2-3 tbsp honey if you like it a bit sweet. Instead of spring onions, you could use leeks.
