Linguine with Shiso Herbs

Such simple seasoning using shiso herbs and sesame oil - ideal for a light lunch.

Ingredients

Linguine 200g
Salt as required
Shiso herb leaves 7-8
Ginger 1/2 thumb
Shiitake mushrooms 4
Sesame oil 2 tbsp
Sesame seeds as required

Method

Boil the water in a large pan and add the salt. Cook the linguine for 10 minutes.

Cut the ginger into very fine strips. Cut the shiso herb leaves and mushrooms into strips.

Put the sesame oil and ginger in a frying pan on medium heat. Add 2/3 of the shiso herbs, all the shiitake mushrooms and salt and fry.

Drain the linguine and add to the frying pan and mix thoroughly. Add some pasta water to make a light sauce.

Transfer to a serving dish and sprinkle the remaining shiso herbs and the sesame seeds.

Tips & Note

If you don't have shiso herbs, you can use chives.
The ginger really gives this dish a good flavour, but you could use garlic and pepper instead if you prefer.
