Healthy Sweet and Sour Pork

A famous recipe originally invented by Chinese chef Mr Chen. You can easily make this healthier version at home without deep frying the pork first.

Ingredients

Pork loin fillets 100g
Carrot 1/2
Onion 1/2
Spring onions 2
Seasonings:
Salt & pepper as required
Sake 1 tsp
Soy sauce 1 tsp
Potato starch 1 tbsp
Sweet & sour sauce:
Sugar 1 tbsp
Vinegar 1 tbsp
Sake 1 tsp
Soy sauce 1 tsp
Chicken stock 100ml
Potato starch in water 1 tbsp
Salt as required
Tomato ketchup 1 tbsp
Sesame oil 1 tbsp

Method

Slice the pork loin thinly and rub well with the seasonings.

Put all the sweet and sour sauce ingredients in a bowl and mix together.

Dredge the pork slices with potato starch and drizzle with a touch of water just before frying to prevent the coating from coming off.

Heat a frying pan on medium heat and add some vegetable oil and fry the pork from Step 3.

Add the small chopped vegetables and fry with the pork.

When the pork is cooked and the vegetables are soft, add the ketchup and mix. Turn the heat down to low.

Pour in the sweet and sour sauce from Step 2 a ladle at a time and thicken. Don't pour in all at once.

When the sauce is thickened, add a final touch of flavour with the sesame oil drizzled on top.

Tips & Note

Restaurants usually deep fry the pork in batter, but this would be a nuisance at home. Thin slices of fried pork dredged with the coating is a much less troublesome option. The sweet and sour sauce recipe given here is just a standard but you can customise to suit your taste.
