Super Delicious Aubergines with a Spicy Garlic Sauce

Ingredients

Aubergine (medium) 1
Garlic 2 cloves
Ginger 1 thumb
Red chilli 1
Spring onion 1
Vegetable oil 3 tbsp
Soy sauce 1 tbsp
Balsamic vinegar 1 tsp
Sugar 1.5 tsp

Method

Ffinely chop or grate the ginger and garlic. Roughly chop the chilli and spring onion (deseed the chilli first if you're not a spicy dish lover).

Score the aubergine skin in a criss cross, then cut into a bitesize wedges about 1cm thick. Now you just need to fry everything!

Put 2 tbsp of the vegetable oil in a frying pan and heat until hot. Fry the aubergines for 5 to 6 minutes on both sides. Aubergine absorbs oil quickly, but never add more oil.

Make a space in the frying pan and add 1 more tbsp of the vegetable oil. Add the garlic, ginger, chili and spring onions and fry for 30 seconds.

Mix all the ingredients together and add the soy sauce, balsamic vinegar and sugar and stir fry for 1 minute. It's done! Enjoy!
