Deep Fried Padron Peppers

These peppers are everyone's favourite Spanish tapas and easily available in large supermarkets.

Ingredients

Padron peppers 130g
Vegetable oil as required
Maldon salt as required

Method

Wash the peppers and pat dry.

Put the oil in a pan to a depth of 4-5cm and heat.

Fry at 180C. Be careful of the hot oil splashing.

Keep the peppers moving in the oil. When you see bubbles forming on the skin, they are ready to remove.

Put on kitchen paper to drain off the excess oil. Sprinkle with Maldon salt and serve.

Tips & Note

■I used Maldon sea salt this time - of course you can use any salt but I recommend salt flakes.
