Raisin Fairy Cakes

Ingredients

Egg 1
Sugar 70g
Honey 1 tbsp
Butter 80g
Flour 40g
Almond flour 40g
Rum soaked raisins 4 tbsp
Vanilla extract as required

Method

【Preparation】
Soak the raisins in rum, brandy or madeira wine.

Prepare a muffin or madeleine tray by rubbing with butter and lightly dusting with flour. Preheat the oven 200C.

【Method】
Put the butter in a pan on low heat and gently cook until browned, then remove from the heat.

Add the sugar and honey into the beaten egg and whisk lightly.

Strain the butter from Step 3 into Step 4. Sift in the flour and almond flour and fold in gently.

Pour the mixture into the muffin tray. Drop in the raisins and bake for 15 minutes. Remove when nice and golden.

Tips & Note

●If you have time, soak the raisins overnight. Put the raisins in a bowl or jar and add enough liqueur to just cover.
