Serves 2 Prep: 10 min Cook: 20 min

Ingredients

Tinned mackerel (in sauce) 1
Oyster mushrooms 130-150g pack
Chinese leaves 130-150g pack
Konjak potato noodles 1/2 pack
Sake 3 tbsp
Light brown sugar 1.5-2 tbsp
Soy sauce 3 tbsp
Sea salt as required
Cayenne pepper as required

Method

1
Roughly chop the Chinese leaves and tear apart the mushrooms. Boil the noodles for 1-2 minutes.
2
Put Step 1 and all the other ingredients into a deep pot with the mackerel and sauce on a medium heat. Once boiled, turn the heat down and simmer for 10-15 minutes.
3
Season to taste with salt. Add any greens for garnish and it's ready to serve.

Tips & Note

You can also use tinned salmon instead of mackerel.
You can also add a beaten egg at the end and cook until half solid.
If you want to make it more colourful, you can also add finely sliced carrots.
