Smoked Mackerel Bibimbap

Make a good quantity to eat later and in a bento lunchbox.

Ingredients

Cooked rice for 2 people
Smoked mackerel fillet 1
Spring onions 2
Garlic 1 clove
Gochujang 1 tbsp
Crushed sesame seeds 1 tbsp
Sesame oil 1 tbsp
Soy sauce 1/2 tbsp
[Namul]
Beansprouts 1/2 pack
Courgette 1
[Namul seasoning]
Crushed sesame seeds 1 tbsp
Sesame oil 1 tbsp
Smashed garlic as required
Soy sauce 1/2 tsp
Cayenne pepper as required
Salt & pepper as required

Method

Finely chop the spring onions. Remove the skin and bones from the mackerel and make into flakes. Put both in a large bowl.

Add Gochujang, crushed sesame seeds, soy sauce and sesame oil and mix well.

Cut the courgettes into long strips and fry in a frying pan with heated sesame oil and half the Namul seasonings.

Boil the beansprouts for 1 minute and drain. When handhot, season with the remaining Namul seasonings.

Put some cooked rice in a bowl and cover with the mackerel at Step 2, courgettes and beansprouts, and serve alongside more Gochujang.

Tips & Note

●You could also make this with carrot and aubergine Namul.
