Serves 4 Prep: 10 min Cook: 15 min

Ingredients

Turnips (large) 2
Tinned white crab meat 1
Dashi stock 600ml
Sake 2 tbsp
Mirin 1 tbsp
Light soy sauce 1 tbsp
Sea salt 1 tsp
Potato starch or cornflour in a bit of water as required

Method

1
Peel the turnips and cut one in half then into 5mm slices and grate the other one.
2
Put the turnips from Step 1 and the crab meat into a pan with the dashi stock. Add the sake and turn on the heat to high.
3
When it gets to the boil, turn down to low heat and add the mirin and soy sauce and simmer.
4
Add the potato starch in water to thicken. Serve with some yuzu peel, chilli powder and grated ginger alongside to garnish.

Tips & Note

●Grating one of the turnips make this soup smoother but you could make it chunkier by slicing both instead.
