Ingredients

Tinned salmon 1
Onion 1
Mushrooms 5-6
Carrot 1
Butter 1 tbsp
Flour 1 tbsp
Milk 300ml
Single cream 200ml
Salt & pepper as required
[Butter Rice]
Rice 2 gou (300g)
Butter 20g
Vegetable oil 1 tbsp
Bay leaf 1

Method

1
Put the butter and vegetable oil in a frying pan and heat up. Add the (unwashed) rice and lightly stir fry.
2
Put the rice into a rice cooker and enough water. Add the bay leaf and cook as usual.
3
Finely chop the onion, mushrooms and carrot, pull apart the salmon into flakes.
4
Put butter into a pan and add the chopped vegetables and stir fry well. Add the flour and stir fry again.
5
Add the flaked salmon and fry again.
6
Add milk a little at a time, mixing all the while. Cook on low heat for 2-3 minutes when all the milk has been added. Add the single cream and season with salt & pepper.
7
Arrange some cooked rice from Step 2 in a mould onto a plate to create a nice shape. Pour Step 6 around the rice and sprinkle with finely chopped parsley, it's ready to serve.

Tips & Note

●Plain cooked rice is also fine if you don't have time to make butter rice.
●Don't boil at Step 6 once the single cream has been added.
