Nice and Spicy Chicken and Broccoli Chunky Soup

A fantastic soup to keep you warm on a cold day.

Ingredients

Broccoli 1/2
Chicken thighs 2
Garlic 3 cloves
Ginger 1 thumb
Chinese chilli bean sauce 1/2-1 tbsp
Soya milk 2 cups
Water 1/4 cup
Sake 2 tbsp
Oyster sauce 1 tbsp
Sesame oil 1 tbsp
Oil for frying as required
Nori sheet as required

Method

Tear the broccoli into small florets. Remove any excess fat from the chicken and cut to bitesize. Finely chop the garlic and ginger.

Put the sesame oil in a pan and fry the garlic and ginger on low heat. Add the chilli bean sauce and fry further.

Add the chicken and fry on medium heat until browned. Add the broccoli and fry further.

Add the sake and when the alcohol burns off, add the soya milk and water. Simmer on low heat for 7-8 minutes.

Add the oyster sauce and season with salt & pepper.

Sprinkle with shredded nori before serving.

Tips & Note

●Once the soya milk is added, it will overflow if the heat is not on low, so take care
●You can add tofu or beansprouts or Chinese leaves if you like.
